The lesson ended up being downgraded massively when I found out that many of the students did not know what an average is. Rather than try to plow through it, I simplified the lesson made it only about averaging and graphing. Originally, I had planned on going over BMI, BAI, and obesity rates by state. Only the latter was covered. The first class was my guinea pig for the other classes.
Lesson learned: Don't assume even the simplest things.
